Corbin's Star Wars Room

I lurve it! Still have two things to add (the picture in the empty frame, and rain gutter bookshelves on the wall with his little blue chair). If you know me, then you know most of his room is from Target (curtains, clock, rug, pillow, toy cube, white shelves, lamp, little plastic bins). His blue chair was only $20 at Walmart, the lightsaber nightlight was from Amazon (and changes colors!), and the prints are all from etsy. I Modge Podged his name with materials from Hobby Lobby. And his crib skirt? Yeah, that was $2 a yard fabric that I duct taped to the bed, lol.

Sorry

Sorry y'all, I've been busy this past week. We finally painted Corbin's room, and it's about 90% done - we're just waiting on a print from etsy, and I'm building him some rain gutter book shelves. I've also been working on selling some of his baby items, like his Rock N Play, because he is finally sleeping in his crib. Oh, and did I mention he can crawl now? That alone has been keeping me busy! Running errands, the girls' first ballet class, trying to get a new roof put on our house thanks to hail damage, getting the girls birth records in order for school & insurance, yadda yadda. Like I said - BUSY!

Anyway, we took some time out yesterday (or as Natalie says "lesterday") to eat dinner outside all picnic like. Not the best photos, but we had fun :)

Mexican Salad

I don't know about you guys, but we eat a lot of Mexican entrees here at our house. Our current favorite is honey-lime chicken enchiladas. However, I always have a hard time coming up with side items. Only Natalie will eat rice, only I will eat re-fried beans, and none of us needs to eat a boatload of queso and chips, lol. So I fooled around and came up with something that is fresh, easy, and goes perfectly with dinner! Bonus? I had almost every item in my kitchen already.




Ingredients:
1 can black beans - rinsed & drained
1 can garbanzo beans - rinsed & drained
1 can Mexicorn (the corn that has green chiles - or a can of corn & chiles) - rinsed & drained
1 small red onion - chopped
1 medium red tomato - chopped
1 ripe avocado - peeled & chopped
1/3 cup vegetable oil
1/4 cup red wine vinegar
1/2 tsp hot sauce (pick your favorite - add more for more spice)
dash of salt
fresh cilantro (optional)

Directions:

1. Toss the beans, corn & veggies into the bowl

2. Mix the oil, vinegar, salt & hot sauce in a small bowl

3. Pour the sauce over the salad, and toss gently

4. I like to put mine back in the fridge before serving, so it's nice & cold

Beach Trip Days 3 & 4

On Sunday, we headed back to the beach for more fun in the sun. After cleaning up a little bit, we headed back to the beach for a family photo shoot (which my brother-in-law helped with).












Afterwards, we took the kids to Miyabi for dinner. I was worried because there was a 45 minute wait, and the twins haven't been to Hibachi since they were Corbin's age. But they ended up LOVING it!

Monday we packed up, and headed back to Broadway at the Beach. On the way down, we'd seen signs for the live mermaid shows, and figured Natalie would absolutely love it. I was actually a bit disappointed in the aquarium - especially after going to the one in Atlanta several times. But the girls enjoyed themselves.







And then, after many pit stops, we finally made it home!

Beach Trip Days 1 & 2

Let's just say that the girls had the absolute BEST time at the beach! I SO wish I'd captured Audrey seeing the beach for the first time - her sheer joy was just so adorable. We drove down on Thursday night and got to Litchfield around 4:00. Because we stayed in a condo with a kitchen, we headed to the grocery store to get breakfast & lunch foods. We did take the girls to the private pool for about an hour, and then headed off to sleep, preparing for the beach on Friday. Natalie's favorite thing to do was pretend to be a mermaid, and even Corbin enjoyed splashing in the water.









Typically we'd come in from the beach each day, head to the pool to swim for an hour, and then bathe and get ready for dinner. On Friday, we headed about 25 minutes away to Broadway at the Beach (Myrtle) for dinner at Key West Grill. I ordered a 10oz fillet, and I swear Audrey ate more of it than I did! We took the girls to It's Sugar and let them pick out some candy, and then rode the old Boardwalk rides. So much fun!








Saturday Eddie & I were able to escape for lunch at Salt Water Creek (yumm!) We also went to the beach & pool again, and then spent the evening bumming around Litchfield. They have a crabbing dock, and fishing dock. Eddie & his brother were throwing a cast net when they looked down and saw an alligator! Every time they'd move down to get away and cast, the gator would follow. Dinner that night was pizza & a movie back at what the girls called the "new house".
